These cookies are the chewiest, most heavenly delicacies that you’ll ever get your hands on… hopefully. The cookies work perfectly with the nuts and chocolate chips and come together to make a healthier, less-guilt version of chocolate chip cookies that everyone knows and loves.

I’m a stickler when it comes to the texture of cookies. For some reason, I can’t stand thin and crispy cookies, instead I take that crispy outside and fill it with a chewy, delicious inside. The oats are really good at switching up the texture along with the nuts, and the chocolate chips give the cookies that signature taste. Personally, I love cooking far more than baking, but every once in a while I decide to switch things up because baking not only provides an opportunity to involve the family and make something together, but the fruits of that labor also come in the form of delicious indulgences that the family can enjoy together as well.

Ingredients

  • 1 cup All Purpose Flour
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 large egg
  • 1 1/4 cups rolled oats
  • 1/3 cup Chocolate Chips
  • 1/3 cup Chopped Walnuts
  • 1 stick of butter (room temperature)
  • 1/2 tsp vanilla extract

Directions

1First, preheat the oven to 350 (convection bake if possible). Then cream the butter and sugar together in a stand mixer (using the paddle attachment would be best).
 
2Next, addthe egg and mix, followed by the vanilla extract. Now, sift the flour, salt, cinnamon, nutmeg, and baking soda. Then gradually add them into the wet ingredients until fully incorporated
3Mix in the oats by and, and then the nut and chocolate chips as well. Once everything is mixed well, start scooping the dough into one inch balls on a parchment paper lined baking sheet. Press down with a fork or spoon to flatten out slightly.
4Bake them for around 12-15 minutes or until golden brown (pro tip, take them out slightly before they look completely done because they’ll finish cooking on the wire rack). Set them on a wire rack after you take them out and then after cooled, enjoy!
