These “Egg Flowers” are a perfect dish to have any time of day even if they’re technically for breakfast. Have them with a piece of toast or with rice and you have a flavorful and nutritious dish that’s simple to make too!

My mom has been making this dish forever, however recently I decided that I wanted to learn how to make it for myself. I’ve always loved eating this and its an amazing way to add flavor and easy protein into your diet without defaulting to the normal scrambled or fried eggs. She taught me how to make the dish and with both her instructions and my own twist on it this recipe was born. I for sure recommend trying this out at any time of day!

Ingredients

  • 2 Onions (diced)
  • 2 Tomatoes (diced)
  • 1 clove of garlic, minced
  • 4 eggs
  • Chili Powder
  • Turmeric Powder (optional)
  • Salt and Pepper (to taste)

Directions

1First, heat a nonstick pan and add some olive oil. Then add the onions and garlic to the pan and cook them down. As the onions become cooked through, add the tomatoes and mix.

2Now, add in the spices and the salt and pepper. Let the tomatoes and onions cook down until almost reaching the consistency of jam. Adjust with added seasonings of your choice if you prefer.

3Crack the 4 eggs onto a “bed” of the tomatoes and onions and then season with salt and pepper again. Then, cover the pan and let the eggs cook through. Top with some greens like cilantro and you’re done. Enjoy!
