These lettuce wraps are the perfect vessel to carry the most flavorful shrimp you’ll ever taste. The perfect combination of sweet, spicy, tangy and smoky just makes this shrimp so delicious that you’ll keep coming back for more.

This recipe was mainly the joining of an Asian style marinade and a more lemon-based flavor profile. Although it was made largely based on experimentation, for once I can surprisingly say I got it perfect on the first try. The wraps are also quite healthy, especially compared to more traditional grilling dishes. It’s made almost entirely out of veggies and protein, all while maintaining one of the most enticing flavors I’ve ever made. I can’t wait until I get the chance to make them again and I sincerely hope you enjoy them as much as I did.

Ingredients

For the shrimp

  • 1/2 lb shrimp (peeled and deveined)
  • 2 tbs sweet chili sauce
  •  1/4 cup soy sauce
  • 2 tbs sriracha
  • 1 tbs ginger garlic paste
  • 2 tbs brown sugar
  • 1/2 cup lemon juice
  • 1/2 tbs lemon zest
  • Salt and Pepper (to taste)

For the wrap:

  • Butter Lettuce
  • Grilled Onions
  • Other Grilled Veggies (I used zucchini)
  • Sweet and Spicy Peanut Sauce

Directions

1Mix all the ingredients other than the shrimp in a bowl (remember to overseason because a lot of it will be lost in the grill). Then add the shrimp and let it marinate for an hour.

2As the shrimp marinates ready up the grill. Then, put the shrimp on skewers and grill them until almost cooked through. The residual heat will finish them off.

 

3Then, either on the grill or after, glaze them with some of the marinade. Assuming that the rest of your toppings are ready, the final step is to assemble the lettuce wrap in any way you please and enjoy!
