This appetizer is the perfect starter for any party or get-together. Unless you’re one of those people that hates mushrooms, you’ll fall in love with these delicious, flavor packed, bite size starters.
 
I remember the first time making these for my family; we were getting ready to watch a movie and I had just taken the mushrooms out of the oven. Before the movie started… before I could even plate them, my family finished all of the mushrooms from right out of the baking sheet! Ever since that day, my parents have pretty much forced me to make these before any spacial event or party that we were hosting… and if I’m being honest, I don’t mind as long as I get to have some too!
 

Ingredients

  • Around 15 Baby Bella Mushrooms, cleaned
  • 8 oz Cream Cheese
  • Parmesan Cheese (shredded)
  • 1/3 cup Breadcrumbs
  • Minced or Grated Garlic
  • Salt and Pepper (to taste)
  • Crushed Red Pepper
  • Olive Oil

Directions

1First, remove the stems of the mushrooms (DON’T DISCARD THEM). Keep the heads of the mushrooms aside and chop the stems into coarse pieces. Preheat the oven to 375 °F
2In a nonstick skillet, heat some olive oil and then add the garlic and crushed red pepper. Let the garlic brown for a bit and then immediately add the chopped stems.
3While cooking down the stems, add salt and pepper but season conservatively since we’ll be seasoning this later on as well. Once the stems have been cooked down and everything is just a nice golden brown, we can start making the stuffing.
4In a large bowl, add the cream cheese, the cooked down stems, breadcrumbs, and some shredded Parmesan as well. Mix it all together and then season once again with salt and pepper to taste.
5Finally, in a baking sheet lined with aluminum foil, coat with nonstick spray. Then stuff each mushroom with our stuffing and top with some more shredded Parmesan cheese before arranging them on the sheet.
6Bake them for around 20 minutes or until the mushroom are golden brown and the cheese on top has crisped up. All that is left to do after that is enjoy!
