I know avocado toast is quite the modern-day breakfast sensation, so naturally, I had to go and put my own spin on it. The addition of the bagel brings more complexity while salsa just adds even more depth to this simple and fulfilling breakfast.

Nowadays I’ve been having 2 practices daily (one for swimming and another for water polo) so after my morning practice I’m always starving. This toast gets me all the nutrients I need to start the day off and is actually enough to hold me off well into the afternoon after my second practice. I originally just threw this together with some random stuff I had at home but it turned out so well I just had to share it with you guys.

Ingredients

  • 1 Egg
  • Half a bagel (I used an everything bagel)
  • Half an avocado, sliced
  • Jalapeño Cream Cheese
  • Green Salsa

Directions

1First, toast up the bagel and get it nice and crispy. While it’s toasting prep the avocado and start heating up a nonstick pan.

 

2Next, add a tiny bit of butter or oil to the pan and crack the egg into the pan. Cook the egg till the yolk reaches the right amount doneness for you.

 

3Now, its time to assemble. First, spread a layer of cream cheese on the bagel followed by adding the avocado on top. Next, sprinkle a bit of the salsa over the avocado and then top it off with the egg. Enjoy!
