These chicken kebabs are the BOMB. The flavors meld together perfectly and leave you with the most delicious kebabs you’ll ever try. The chicken is juicy, jam-packed with flavor, and crispy as well, making this an irresistible dish that will have you longing for more.
I made probably eight or nine of these chicken kebabs and my family of 4 finished it in a single dinner. That’s saying something. This dish was a hit for my whole family and I can almost guarantee that it’ll be one in your household as well. There’s a lot of variation in this dish, with some options when it comes to ingredients, but at the end of the day, you’ll be happy with this dish no matter what route you take.
Ingredients
- 1 lb chicken thighs (skinned and boneless)
- 3/4 cup Greek yogurt
- 2 tbs almond paste
- 1/2 tbs minced jalapeños
- 1/s tbs Garam Masala
- 1 tbs fresh cilantro (OPTIONAL)
- 2 tbs ginger garlic paste (or 1/2 tablespoon of each, minced or in a paste form)
- 1/4 tbs white pepper
- Salt (to taste)
- 1 tbs corn starch
- Lemon or Lime
Directions
1Mix all the ingredients other than the chicken and the corn starch in a bowl. Next, cut the chicken thighs into pieces/cubes, around 1/2 inch wide. Then, ad the corn starch into the marinade, mix again, and then add the chicken.
2Let the chicken marinate for an hour. Then, take out wooden skewers and soak them in water (this is a good technique whenever you’re grilling so that the skewers don’t burn). Now, just add the chicken to the skewers and grill them. Remember, you’re going for an internal temperature of 165°F.
3Once the chicken is ready, remove it from the grill and sprinkle a bit of lemon/lime juice on the kebabs. Also, if you want, try this out with pickled onions, its a good accompaniment. Enjoy!
TIPS:
- Chicken thighs allow for juicier chicken; however, breasts also work.
- You can replace the almond paste with heavy cream in case you have allergies.
- Although I highly recommend Garam Masala, if it’s not something you have readily available or just don’t want to use it, you can replace it with your own spices and herbs.
