This is a simple and delicious dish for anybody to make if they want a protein filled dinner that also doesn’t require hours of your time.

This spin on shrimp scampi is a scrumptious dinner that is also filled with protein and carbs (so basically all a swimmer eats). This dish is also pretty simple and doesn’t take too long to cook, making it the perfect quick and easy dinner for anybody, especially athletes.

Ingredients

  • 1 pound peeled deveined shrimp, halved
  • 2 pints cherry tomatoes
  • 180 mL white whine
  • 2 cloves garlic, sliced thinly
  • 2 Tb Olive Oil
  • Red Pepper flakes
  • 1 box Angel Hair Pasta
  • Water (to boil)
  • Parsley
  • Salt and Pepper (to taste)

Directions

1Heat the oil in a large pan and add chili flakes. Let oil infuse with the flavor and then add garlic. Once golden brown, add tomatoes and turn up the heat to high. Cover and let it cook for 5 minutes.

2While this is going on, start cooking your pasta, and don’t forget to salt the water (save some water for later if needed).

 

3Then mash the tomatoes and add white wine. Once the alcohol cooks off, season it with salt and pepper, and also sugar if necessary (to offset wine flavor).

 

4Then add shrimp and cook until pink. If there isn’t enough liquid, add some pasta water to make up for it.

 

5Now add the pasta and cooking for a couple more minutes to incorporate everything together. Finally, add some parsley and any other seasonings needed. There you go, a tasty protein-filled dinner!
