This simple variation on a Caprese panini is one of my favorite things to make. Its the perfect meal to make the night before and then take to school for a delicious lunch. This panini is perfect with chips, soups, you name it!

This is one of my staple school meals, one that I take almost every week at least once. I love to have one at any time, whether its sitting down at the lunch table with my friends or eating one before a swim meet for those quick carbs. Either way, I know that i enjoy them and I hope you do too!

Ingredients

  • Ciabatta Roll, sliced in half
  • Tomato, sliced
  • Arugula
  • Mozzarella cheese (preferably fresh and hand shredded)
  • Pesto sauce
  • Butter

Directions

1First, preheat the panini press, and get everything ready for preparation. Then, start with spreading some pesto on both halves of the roll.

 

2Next, add the ingredients on the bottom half of the roll in the following order: A bit of cheese, tomato slices, more cheese, arugula, and then a bit more cheese to top it off. This make its so that the cheese keeps the sandwich together.

Next, add the top half of the roll and spread a bit of butter on both sides. Then, put the sandwich on the panini press and close it, letting it cook until it’s crispy and the cheese is fully melted.

4Finally, just serve the panini with your choice of soup, chips, or really whatever you want. Enjoy!
